Where are custom stats created?

This is driving me absolute batty, I find lots of info on the web about people making them, and having problems parsing them, but never where to actually create one.

Where is this done?

Via the menu Configure > Statistics.

We are working on the documentation for PT4 but while we're still in the Beta phase functionality is subject to change so the docs aren't finalized yet.
The custom stat process has been simplified a little for PT4, but it works in basically the same way as it did in PT3 so the PT3 tutorial Tutorial: Custom Reports and Statistics should get you started.
Note that in PT4 we don't have so many sections - now stats are just split into Cash or Tourney, and Player or Hand.
